What is StoryLab?

StoryLab is a seasonal residency and food-focused education platform designed in partnership with New York State Center of Excellence for Food and Agriculture (CoE) at Cornell AgriTech, to connect farmers and food producers in Chenango County and the surrounding Upstate New York region with culinary professionals for collaborative market development.

We're not an agricultural education program. We're not a cooking school. We're something closer to a creative lab -- a structured season of experimentation, feedback, and relationship-building designed to help farmers find the markets their agricultural products deserve. As a member of CoE, StoryLab is part of a statewide hub connecting food and agriculture businesses with the research, mentorship, and resources they need to grow. That membership shapes what StoryLab can offer participants: not just access to culinary relationships and regional market development, but a pathway into Cornell's broader ecosystem for food and agriculture entrepreneurs.

Strategic Culinary–Agricultural Collaboration

Farmers collaborate directly with chefs and food innovators to co-design crops around flavor, texture, and culinary performance. This creates real-time feedback loops that most growers never experience.

Cross-Disciplinary Network Expansion

Farmers connect not only with chefs, but with food product developers, fermentation specialists, marketers, and fellow innovators.

Season Extension & Value Preservation

Farmers learn practical preservation techniques, including fermentation, dehydration, curing, freezing, and shelf-stable processing, that allow crops to generate income beyond the harvest window.

Narrative & Brand Amplification

We help farmers articulate the story behind their crops and show them how to communicate their brand with clarity and confidence – increasing visibility and perceived value.

Specialty Crop Diversification

Farmers gain access to a curated list of underutilized varieties that align with StoryLab’s flavor and experimentation philosophy, including specialty tubers, edible flowers, ancient grains, and rare, regional crops suited to our produce exchange model.

Value-Added Product Pathway Integration

By learning how crops translate into value-added goods and emerging markets, farmers gain insight into climate-adaptive crop selection, diversified revenue models and specialty niche scaling, The result is greater resilience against market and climate volatility.

Why does StoryLab exist?

Great food begins long before it reaches the plate. It begins in the soil, in the decisions about what to plant, how to grow it, and who it is grown for. When farmers and chefs work side by side, ingredients are shaped with intention, curiosity, and care. Flavor becomes deeper. Creativity becomes shared. Risk becomes possibility.

StoryLab creates space for experimentation, preservation, and dialogue between field and kitchen. Farmers gain insight into how their crops perform in real culinary settings. Chefs gain a deeper understanding of seasonality, ecology, and the craft of cultivation. Together, they design ingredients that are distinctive, resilient, and rooted in place.
